Roasted Sweet Potatoes
Preheat oven to 180°C.
Peel and cut sweet potato into 2cm cubes.
In a bowl combine sweet potato cubes, oil and garlic powder - stir to combine.
Place sweet potato onto a lined oven proof tray in a single layer.
Cook for 30-35 minutes or until golden and crisp (turning halfway).
Season with salt and pepper and serve.

3 tablespoons coconut oil (melted)
1 teaspoon garlic powder
1/2 teaspoon pepper
1/2 teaspoon salt
