CAJUN FISH TACOS WITH PINEAPPLE  SALSA

INGREDIENTS

600g white fish fillets

2 tbl Cajun spice blend

1 tsp salt

1 cup plain flour 

2 tbl olive oil 

½ fresh pineapple

pickled jalapenos (depending on heat about 10 slices)

handful mint chopped

6 sprigs coriander chopped

1 spring onion chopped

pinch salt 

1 packet corn tortillas

1 packet slaw mix 

aioli 

fresh lime

RECIPE DIRECTIONS

1. To make the Cajun fish, cut fish fillets into small nugget size pieces or strips depending on the type of fish. Sprinkle with salt and Cajun spice blend and allow to marinate for 30 minutes. 


2. To make salsa, add pineapple, jalepenos, mint, coriander and onion in a small bowl and mix well. Add salt to taste. Add more or less jalapeno depending on your preference. 


3. To cook the fish, heat a large fry pan to medium heat and add olive oil. Toss the fish lightly in the flour to coat and then place in the fry pan. You can cook the fish in small batches to ensure your fish gets crispy and brown. 


4. To serve, heat your tortillas as per the packet instructions, toss the slaw mix with the aioli. Place slaw on the tortilla followed by fish fillets and top with the salsa. Serve with fresh lime.
